Dodough (Fratelli di Teglia) Pizzeria

It’s cold and dreary, so it’s an ideal time to write about pizzas – and in particular the Roman-style pizzas from Dodough (Fratelli di Teglia) behind The Spires in Barnet.

In what’s rapidly becoming Barnet’s little food quarter, these guys are developing a loyal local following. Just, for starters, I love the retro van, but the pizzas themselves are delicious. Roman pizzas are rectangular in shape (cooked in a teglia pan) and have a distinctive pillowy bready base, but these are light and very tasty (made with extra virgin olive oil, generously seasoned with Maldon salt and proved for 48 hours).

So far, our favourite is the Margherita as the simplicity works so well, but the selection varies according to the season. Keep an eye on what’s currently on offer as it changes each month. Currently there are four: Margherita, Vegetarian, Meaty (cheese, pancetta and mushroom) and Special Romana (Marghartia based with a choice of salamis). Their autumnal Vegetarian pizza was the fabulous sounding marinated pumpkin, Taleggio cheese and basil. Pizzas come in three sizes: £5/6 for Quarter Teglia (4 x 10 inches), £9/11 for the Half Teglia (8 x 10 inches) and £15/18 for the Full Teglia (16 x 10 inches), but you can combine flavours.

The pizzas are lovingly prepared by Giovanni while Noah fronts the business and organises the deliveries. If you need some quality comfort food, either pick up the phone pop along there. You won’t be disappointed.
